Pecorino spumante extra dry
Grape variety: Pecorino 100%.
Geographical location of the vineyard: vineyards are located at about 250 meters above sea level. The nature of the soil is mainly alluvial of medium texture with a sandy tendency, characterized by a very good drainage but a shortage of organic substances.
Vinification: grapes are harvested earlier to keep the natural acidity. The grape destalking is followed by a light maceration with the grape skins at controlled low temperature and subsequent soft pressing and static decantation. The clear must is inoculated with selected yeasts and the fermentation takes place in small stainless steel tanks at controlled temperatures. It becomes frothy through the Charmat method.
Alcohol content: 11,5% Vol.
Colour: this wine has a bright yellow colour with greenish tinges. Fine and persistent perlage.
Smell: delicate and pleasant perfume, with green apple scent.
Wine glass: tulip- shaped glass.
Serving temperature: 8°C.
Taste: soft and fresh taste.
Gastronomic pairings: the Pecorino Spumante Extra Dry, obtained with Charmat system, is an elaborate wine with a delicate smell, that can be appreciated not only throughout an aperitif. It is excellent also if served with entries or pasta dishes with delicate sauces, but also with seafood soups, white meats and fresh creamy cheeses. Since it is refined in French oak barriques, it is a precious drink able to enhance every kind of food.
